Grilling Advice for those Who Like to Grill by the American Cancer Institute

It was bad news for people who like the taste of blacked charcoal-ed meat. This style of cooking dramatically increases one’s chances of getting cancer.

However, the news was not all bad. According to the American Cancer Institute just marinating meat before placing it on the charcoal grill can reduce cancer promoting agents by as much as 90%. Therefore, people who like this style of cooking can still have that charcoals-ed flavored taste over a charcoal fire. These chemical byproducts can be even further reduced by placing meats further up on the grill away from the flame. There are also spices and seasoning on the market that can provide the same flavor as cooking on the a charcoal grill. It is possible to not cook on a charcoal grill and still get that desired taste.

If using a charcoal grill, the Cancer Institute advices against the practice of allowing the grill’s flame to come in contact with meat. Flame seared meats produce Heterocyclic Amines (HCA) and Polycyclic Aromatic Hydrocarbon known as (PAH). PAH occurs when the flame comes in contact with the meat. And HCA is produced as a result of sustained high temperature heat. Both of these chemicals are thought to be cancer producing substances.

Toby Keiths I Love This Bar & Grill to Open March 8 at WinStar World Casino

Superstar Toby Keith will open his famed restaurant and entertainment venue, Toby Keith’s I Love This Bar & Grill, at WinStar World Casino at 3 p.m. on Monday, March 8, 2010. The restaurant is located at 777 Casino Way, Suite 1 in Thackerville, Okla.

Named after the singer/songwriters hit single I Love This Bar, the 16,000 square-foot restaurant will serve as an entertainment venue featuring live music and dancing and will feature home-cooked Southern-style fare. The restaurant will have 16 HDTV monitors and two big screens for viewing sporting events, more than 100 pieces of Keith memorabilia, a custom motorcycle and also adorning the walls is half of the Ford truck driven by Keith in the movie, Beer For My Horses.

Guests will enjoy live music with no cover on Friday and Saturday nights from the best in high-energy national and local bands and entertainers. The following have been scheduled during the first few months of opening Dallas-based bands Red River Mudcats and Southern Drive, Scotty Thurman and the Perfect Trouble Band from Gainesville, Roanoke-native Cody Jinks and other local musical talent.

The menu includes many of the home-style Southern dishes the ex-oil field worker calls his favorites: chicken-fried steak, meatloaf, Freedom Fries, fried-bologna sandwiches and ribs and chicken.

Another important menu feature is the American Soldier Special, a nod to Keiths well-known patriotism and USO trips to entertain troops in the Middle East. A cheeseburger, Freedom Fries and a drink is served free of charge to any military personnel with valid military ID.

The WinStar location will be the sixth restaurant and bar for Keith. Hours of operation are Sunday-Thursday 11 a.m.-10 p.m. and Friday-Saturday 11 1:30 a.m.

Hyatt made headlines when it announced the forthcoming menu changes, pledging to reduce the caloric footprint, sodium content and added sugar content at all of its restaurants. Sustainable seafood: Were known for our seafood, so its something we take very seriously. Its important to us to choose sustainable seafood that doesnt jeopardize the ecosystem. In fact, half of our seafood is locally sourced and comes from the waters 100 feet from our restaurant.

Organic beef: Like all Hyatt restaurants, SHOR obtains beef from Meyer Farm. The cattle are raised humanely and have a natural diet, with no artificial hormones. This results in better-quality beef. Also, allowing cattle to graze is better for the environment than shipping in feed.
Fresh and organic produce: Fresh fruit and vegetables maintain their nutritional value better than processed foods, and organic foods avoid synthetic pesticides and fertilizers that are potentially harmful to humans, animals and the environment.
Locally sourced ingredients: Buying local means that food is fresher. Produce can be picked ripe rather than picked early for shipping and chemically ripened. In addition, the less distance food has to travel, the less fossil fuel needed to transport it.
Seasonal menu items: We often feature seasonal ingredients in our menu to take advantage of foods when theyre at their peak of freshness. They require fewer resources to grow and dont have to be shipped from other regions or countries.
Healthier cooking methods: Cooking methods are as important as ingredient selection when it comes to offering customers healthier choices. Thats why we grill, roast and sear the majority of our cooked items rather than frying them.
